One of my favourite biscuits when I was growing up was Chocolate Mint Slices. Of course they were highly processed packaged stuff from supermarkets.  I always thought it was so nice to have some minty taste while I get chocolaty flavour as well.  My sister on the other hand, used to tell me they taste like tooth paste! haha

I was recently reading a food magazine and I found this pretty photography of Mint Slice,  It was so pretty and appealing that I tempted to try one.  As a believer that not all desserts have to be too naughty, I created my own and it turned out pretty damn awesome!  Not only did it taste so fresh and chocolaty but also it looked so delicate and beautiful.   The Barley Grass Powder gave such a  nice clear vivid Green colour it almost looked like I have used food colouring.  It is perfect for people with food sensitivity or are health conscious.  I was quite proud myself on creating this one.

It was hard to stop after a slice so I ended up having 3 in one sitting ( I don’t recommend this ) so be careful not to eat too much at one go.  It is of course Raw Gluten Free, Dairy Free, Grain Free,  Refined Sugar  Free, Dairy Free, Plant Based Wholesome Dessert that is so addictive worth your time to make some. <3

Ingredients

Raw Mint Layer

  • 1 Cup Mint Leaves
  • 2 Cup of Cashew Nuts (Soaked at least 4 hours)
  • 4 Tbs Coconut Oil
  • 3 Tbs Raw Honey or Coconut Nectar
  • 7 Drops of Peppermint or Mint Oil
  • 2 tsp of Barley Grass Powder (or any other Green Powder for colouring) – Don’t freak out, it won’t taste like Barley Grass once it’s done

Raw Chocolate Base Layer

  • 2 Cups of Almond Meal or Raw Almond (or you can mix with other nuts and seeds like Sun Flower Seeds, Pecan, Walnuts)
  • 1/2 Cup of Raw Cacao Powder (It is not the cocoa Powder from the supermarkets; Make sure you read the label for Raw and 100% Cacao)
  • 1/2 Hemp Seeds (Optional- Could replace to unsweetened Coconut Flakes)
  • 1 Cup Dates (Soaked in warm water for a couple hours)

Raw Chocolate Topping

  • 1/2 Cup of Coconut Oil
  • 1/2 Cup Raw Cacao Powder
  • 1/2 Cup Raw Honey or Coconut Nectar
  • 4 Drops of Peppermint Oil
  • Pinch of Sea Salt

How to make Raw Chocolate Mint Slice

  • Make the base – (Grind the Almond if you use he whole Almonds) Throw all the base ingredients in a blender and blend until you get the consistency of sticky dough (not too wet)
  • Fill the 8-9 ” cake tin or baking tray, press and even out with your fingers
  • Make the Mint Layer – Blend all he ingredients in a blender until smooth and silky
  • Pour on top of the Chocolate base
  • Store it in your freezer while you make the chocolate so that it gets harden
  • Make the Chocolate Topping –  Gently melt the coconut oil (by just place in a jar in warm water) and mix with the rest of ingredients
  • Take out the mint slice from the freezer and pour on top of the Raw Chocolate Mint Slice.
  • Harden the Mint Slice in your freezer at least a couple hours before serving so the slice is nice and solidified (easier to yield)
